exactly the vibe I needed on my trip.
I had no idea a cocktail like this
could even exist until I sat down there ????
Fig-infused Jameson, chili honey, black
walnut bitters, a pinch of salt, and
aged Havarti on top — built exactly
the way Svan makes it ????
???? WHAT YOU'LL NEED TO MAKE THIS ????
2 oz fig-infused Jameson
½ oz chili honey syrup
3 dashes black walnut bitters
Pinch of salt
Large clear ice cube
For the infusion:
750ml Jameson Irish Whiskey
4–6 dried golden figs, quartered,
stems cut off
Infuser bottle I used (Crew Bottle):

For the chili honey syrup:
½ cup dark or wildflower honey
⅓ cup hot water
½ tbsp crushed red pepper flakes
1 tsp sugar
Garnish: slice of aged Havarti
???? HOW TO MAKE THE FIG FASHIONED ????
Cut the stems off and quarter the figs.
Drop them in the bottle.
Pour in the Jameson, cap it, and shake.
Rest at room temp, out of the sun.
Strain through a fine mesh strainer,
then double-layered cheesecloth.
Don't squeeze — just let it drip.
Save the figs for a boozy fig jam ????
Steep the flakes in the hot water and
honey for 10 minutes, then strain.
Stir in the sugar while it's warm.
Add Jameson, chili honey, bitters, and
salt over a big cube.
Stir 20–30 seconds to chill and dilute.
Top with aged Havarti.
⏳ HOW LONG TO INFUSE ⏳
Diced as fine as mine — into quarters
with the stems cut off — the fig comes
through fast:
1 day — a hint of fig
2 days — the Goldilocks zone
3 days — fig in your face
Personally, I'd pull it at 2 days.
Short on time? Veður sous vides it at
158°F (70°C) for 4 hours.
???? A NOTE ON THE CHILI HONEY ????
Veður steeps the flakes in the water
first, then adds the honey. I steeped
all three together and it still came
out super well-rounded — either works.
Use a honey with real flavor. Dark or
wildflower stands up to the fig.
Sweet and vibrant, nutty and earthy,
with the fig riding Jameson's sherry
cask notes and a buttery Havarti
finish. I didn't know an Old Fashioned
could do this ????
