A slow and cozy December day in Iceland ❄️
From waking up for fajr and watching the snowfall, then going out to see the most famous cat in Iceland, Diego. I do some shopping and I walk outside, an early 3:30 pm sunset, quiet self-care moments, and ending the day with a warm homemade lamb soup.

Creamy Spiced Lamb, Potato & Tomato Soup (for 2) RECIPE:

Ingredients
- Olive oil (around 1 tsp)
- 1/2 onion & 2 garlic
- Cooked spiced lamb, chopped small or shredded (1 medium piece)
- 3 potatoes, diced
- 1 red bell pepper, sliced
- 1 green chili, sliced
- 1 can (400 g) canned chopped tomatoes
- A handful of fresh spinach
- 1 can cream of mushroom (condensed)
- Spices to taste: Salt & black pepper, cumin, paprika, chili spice
- water or stock or chicken cube + water

Method
1. Heat oil in a pot. Add sliced onion, whole garlic, green chili and red bell pepper. Sauté 2-3 min until fragrant.
2. Add tomatoes. Cook5-7 min until slightly thick and jammy.
3. Add diced potatoes, Add water (2 cups) + chicken cube to just cover. Lightly season with spices. Simmer 20 min until potatoes are soft.
4. Stir in can cream of mushroom, mixing well so it doesn't clump. Add a little more water if it gets too thick.
5. Add lamb and simmer gently 8 minutes. Stir in spinach at the very end; it'll wilt in 1-2 minutes.
6. Let rest 5 minutes before serving.
Serve with bread if available.
